One of the perks of writing about food and sharing recipes with you is that I get to experiment with lots of different flavors and ingredients. Some of them turns out to be uber-good, some others not-so-good, and the latter category rarely makes an appearance on the blog.

These carrot halwa rolls belong to the former category. The combo of flavors and textures in this recipe is so mesmerizing that I just couldn’t wait to share it with you. Before I even tasted them, I knew that the rolls dipped in honey syrup is going to be incredibly delicious.

The recipe is straightforward. Make carrot halwa, roll them in filo pastry, and bake. The honey syrup is a healthier version of sugar syrup substituting sugar with honey.

First, make the carrot halwa (Indian carrot pudding). If you haven’t tried it yet, get the recipe here . It’s just a simple combo of carrots, milk, ground cardamom and a little honey to make it as sweet as possible.

Second, filo pastry. The super thin filo pastry is really good to create spectacular desserts. When baked the super thin pastry turns really crunchy creating a contrasting texture. All you need to do is brush the pastry with oil (or butter), place halwa on one side, and roll. Filo pastry is very delicate, so gentle handling is highly recommended.

Third and final, honey syrup. Water and honey are boiled together, and flavored with cardamom and rose water. It’s very similar to the classic sugar syrup. The flavor of honey goes really well with the filo rolls.

Carrot halwa:

Rolls:

  • ▢ 18 sheets of filo pastry thawed, cut into long rectangles
  • ▢ Oil to brush on pastry

Honey syrup:

  • ▢ ½ cup water
  • ▢ ½ cup honey
  • ▢ 1 teaspoon ground cardamom cardamom powder
  • ▢ 1 teaspoon rose water

Instructions

Carrot halwa:

Rolls:

  • Preheat oven to 180 C / 350 F. Line two baking trays with non-stick baking paper.
  • Lay the filo pastry flat on a work surface. Cover the remaining pastry with slightly damp tea towel to prevent it from drying out.
  • Brush the pastry with a little oil. Place a tablespoon of carrot halwa mixture on the shorter side of pastry. Starting from the shorter edge, roll up the pastry tightly into a spring roll shape.
  • Repeat with the remaining filo pastry. Place them on baking trays. Brush with more oil. Bake for 25-30 minutes or until golden.

Honey syrup:

  • Combine water and honey in a saucepan over medium heat. Boil for 5 minutes. Add ground cardamom and rose water. Drizzle honey syrup over the warm filo rolls.
  • To serve, arrange filo rolls on a serving platter, and sprinkle with slivered almonds or chopped pistachios.
