Chipotle Mushroom Quesadilla Recipe
- Make the mushroom filling - With the mushrooms, you can choose your favorite, portobello mushrooms taste amazing in this dish. Slice them thinly, and add it to a hot pan. Once they are cooked, stir in some garlic until you get a beautiful aroma. As I mentioned, the chipotle seasoning definitely takes it to the next level. It’s a must addition that pairs really well with the mushrooms.
- Make mushroom quesadillas - Fill the tortillas one at a time. Place mushrooms and grated cheese on one side of the tortilla and fold over. You’ll need to cook both sides until they are crispy and browned.

Ingredients
Mushroom filling:
- ▢ 500 g portobello or cup mushrooms sliced
- ▢ 1 tablespoon oil
- ▢ 2 garlic cloves peeled and chopped
- ▢ 2 teaspoons chipotle seasoning homemade or store bought
- ▢ Salt and pepper to taste
Quesadillas:
- ▢ 4 tortillas flour, corn or gluten free
- ▢ 1 cup grated cheese cheddar or mozzarella
To serve:
- ▢ Avocado yogurt dip
Instructions
- Heat oil in a frying pan over medium-high heat.
- Add mushrooms. Sauté, stirring very gently occasionally, for 3-5 minutes or until cooked. Season with salt and pepper.
- Add garlic. Sauté for about 30 seconds or until fragrant.
- Add chipotle seasoning. Stir and cook for about 30 seconds.
- Remove from pan.
- Wipe the pan with a paper towel.
- Reduce heat to medium.
- Place one tortilla in the pan.
- Top with 1-4 cup cheese and ¼th of mushroom filling, and spread evenly over half the tortilla.
- Fold the tortilla over to form a semi-circle. Cook for 2-3 minutes or until golden underneath.
- Turn and cook for a further 1-2 minutes or until golden.
- Repeat with the remaining tortillas, cheese and mushroom filling.
- Cut the tortillas in half.
- Serve with avocado yogurt dip.
