Packed with the heavenly combo of cranberries and brie, these edible crackers are guaranteed to be the showstopper on your entertaining table. Moreover, the flaked almonds add textural interest to the filo parcels. Deliciously perfect way to celebrate the holiday season!

Such an amazing way to celebrate the most wonderful time of the year. Not only are these crackers easy to prepare making them the perfect crowd pleaser, they are fancy and loaded with festive flavors.

Let’s make these festive Christmas crackers

Start with cutting the filo pastry into squares. Depending on the size of the pastry sheets, you’ll get approximately 36 square sheets of filo pastry. As you know, filo sheets are very delicate, so make sure you handle them carefully.

Once squares are ready, the next step is assembling the ingredients of the filling. But before you add the filling, brush the pastry with a little butter. Now, place all the ingredients of the filling - a small slice of brie, a teaspoon of cranberry sauce and some almond flakes - at the very end of the square.

And now comes the fun part. Roll up the pastry very carefully and pinch the ends to make cute cranberry brie filo crackers. Brush the pastry with more melted butter so they’ll get a beautiful golden hue when baked. Finish off with a sprinkle of beautifully black sesame seeds. I arranged the crackers on two baking trays. This goes into the preheated oven and baked until golden.

About 15 minutes later, you can bite into sweet and creamy deliciousness of these cranberry brie filo crackers. For a finishing touch, I placed few rosemary leaves at both ends and it definitely adds to the aesthetic appeal. You can also tie chives at both ends to resemble crackers.

Ingredients

  • ▢ 6 sheets frozen filo pastry thawed
  • ▢ 50 g butter melted
  • ▢ 250 g brie cut into long slices
  • ▢ 275 g cranberry sauce
  • ▢ ¼ cup flakes almonds
  • ▢ 1 tablespoon black sesame seeds

Instructions

  • Preheat oven to 180 C / 350 F. Line two baking trays with parchment paper. Set aside.
  • Place thawed filo sheets on a flat surface. Divide into 3 lengthways and then cut in half widthways, so you have 36 squares.
  • Place one pastry sheet on a flat surface. Cover remaining sheets with a damp towel. Brush pastry sheet with melted butter. Place a brie slice, 1 teaspoon cranberry sauce and 1 teaspoon almond flakes at one end of the square, then roll up the pastry. Pinch both ends to form crackers. Repeat with the remaining filo sheets.
  • Transfer filo crackers to the baking trays. Brush with remaining butter. Sprinkle with black sesame seeds. Bake for 15-20 minutes or until golden.
  • Garnish with rosemary leaves or chives.

  • As filo pastry sheets are very delicate, they may leak and the the filling may come out while baking. You can prevent this by using two buttered sheets of the pastry. Also, make sure the work surface is dry and never use wet hands.
