How To Make Egg Rice
Cook rice - You can use any rice you have on hand in this rice. I really love basmati or long grain, however, jasmine rice also tastes great. Make sure you cook the rice prior to stir frying like fried rice recipes. But, you don’t require day-old rice.

Stir fry rice - Like fried rice, this dish is also quick and easy to make. So, make sure you prep all the ingredients beforehand. Start with stir frying onions, ginger, garlic, green chilies and curry leaves. When the onions get a light brown hue, add eggs and scramble them. Season the scrambled eggs with taco spices and then stir fry with rice and coriander (cilantro) leaves. With a final seasoning from salt and pepper, you dish is ready to be served.
What type of rice should I use? Basmati, jasmine or long grain rice.
How do I make it more nutritious? Add cooked chicken, tofu, paneer, prawns (shrimp) or vegetables like green beans, carrots, bell peppers (capsicum), or corn.

- Add eggs. Scramble and cook for about 2-3 minutes or until set.
- Add taco seasoning. Stir fry for 1 minute.
