To make this fried pork, the meat gets a quick stir fry to seal the outside and keep the juices in. At this stage, all the fat from the pork will also ooze out which you can discard to make a healthier version of the stir fry. The pork needs to be cooked separately, which is later added to the sautéed spices to create the final dish.

  • Pork - The key ingredient used in this recipe. I used pork belly, however, feel free to use your favorite or leaner cuts.
  • Spices - Turmeric, coriander, garam masala, cumin, fennel and red chili powder.
  • Herbs - Curry leaves and coriander (cilantro) leaves.
  • Coconut flakes - I love these crunchy bites, but they are totally optional.
  • Lemon juice - A little splash makes the meat very tender and delicious.

How To Make Indian Pork Fry

Cook pork - Start with lightly frying the pork followed by cooking them until tender. To cook, you will need to add a few ingredients like onions, ginger, garlic and water. This may take about 35-40 minutes.

Stir fry - Fry onions, green chilies, curry leaves and coconut flakes. Add in pork and cook until you get a very thick sauce.

Ingredients

  • ▢ 2 tablespoons oil
  • ▢ 1 kg pork cut into 3 cm cubes
  • ▢ 2 medium red onions sliced
  • ▢ ½ teaspoon ground turmeric
  • ▢ 1 teaspoon ground coriander
  • ▢ 1 teaspoon ground cumin
  • ▢ 1 teaspoon ground fennel
  • ▢ 1 teaspoon red chili powder
  • ▢ 1 teaspoon ground black pepper
  • ▢ 1 tablespoon garam masala
  • ▢ 1 tablespoon minced garlic
  • ▢ 1 tablespoon minced ginger
  • ▢ 1 cup water
  • ▢ 1 green chili sliced
  • ▢ 1 sprig curry leaves
  • ▢ ¼ cup coconut flakes optional
  • ▢ Juice of 1 lemon
  • ▢ ¼ cup chopped coriander cilantro leaves
  • ▢ Salt to taste
  • ▢ Coriander cilantro leaves, to garnish
  • ▢ Rice or naan to serve

Instructions

  • Heat 1 tablespoon oil in a large frying pan over medium-high heat.
  • Add pork. Season with salt.
  • Stir fry for about 10 minutes or until browned all over.
  • Reserve 1 tablespoon oil, and discard the remaining oil.
  • Add 1 sliced onions, ground turmeric, ground coriander, ground cumin, ground fennel, red chili powder, ground black pepper, garam masala, minced garlic, minced ginger and water.
  • Stir to combine.
  • Cook, covered, for about 45 minutes or until the pork cubes are cooked through. Add more water if required.
  • In another frying pan, heat 1 tablespoon oil.
  • Add 1 sliced red onion, green chili, curry leaves and coconut flakes (if using).
  • Saute, stirring, for about 2-3 minutes or until the onions are browned.
  • Add pork with water or sauce. Stir fry for 4-5 minutes or until you get a very thick sauce coating the pork.
  • Squeeze in 1 lemon and stir in chopped coriander (cilantro) leaves.
  • Stir to combine. Heat through.
  • Garnish with coriander (cilantro) leaves.
  • Serve with rice or naan.
