I was born and brought up in a small town in one of the southern states of India, Kerala. The culinary story of this beautiful state nicknamed God’s own country won’t be complete if I don’t tell you about one of its signature snacks, banana fritters, or pazham pori (as the locals call it).

These classic banana fritters brings together the perfect blend of textures – crispy outside, soft inside. Get the batter right, and you’ll be rewarded with perfectly crispy fritters.

Ingredients

  • ▢ 1 ripe plantain see notes, cut into 6 pieces
  • ▢ ¾ cup plain flour or all purpose flour
  • ▢ ¼ cup rice flour not roasted
  • ▢ ¼ teaspoon ground cardamom
  • ▢ A small pinch of ground turmeric
  • ▢ 2-3 tablespoon white sugar depending on the sweetness of banana
  • ▢ 1- 1 and ¼ cups water
  • ▢ Oil for deep frying

Instructions

  • Cut the banana into 4-6 pieces.
  • In a large bowl, combine together plain flour, rice flour, cardamom, sugar, and ground turmeric. Add enough water to make smooth batter.
  • Meanwhile, add enough oil to cover the bottom of a large skillet over medium heat. Dip the banana pieces in batter, and place them in hot oil. Do not overcrowd the pan. Fry until golden. Transfer the fried banana fritters to a plate lined with absorbent paper.
  • Serve them hot with coffee or tea.
