While I was going through my recent posts, I noticed that I haven’t posted a South Indian recipe for a very long time. So, I thought this time I’ll post one of my favorites – mushroom stir fried with desiccated coconut and spices. I’m a big fan of stir fries, and always try to add at least one dish to my everyday menu. As I write this, several stir fry ideas are popping up in my mind – I think it’s time to add one more category to my recipe list. In fact, the entire process of blogging and blog designing is giving my brain a good workout. And I love it! Uh…oh… going off-topic? Come on, let’s read the recipe.

Ingredients

  • ▢ 200 g button mushrooms diced
  • ▢ 2 small garlic cloves chopped
  • ▢ 2 shallots chopped
  • ▢ ⅓ cup desiccated coconut
  • ▢ 1 green chili finely chopped
  • ▢ ½ teaspoon ground turmeric
  • ▢ 1 sprig of curry leaves
  • ▢ ½ teaspoon mustard seeds
  • ▢ 1 tablespoon oil
  • ▢ Salt to taste

Instructions

  • Heat oil in a frying pan over medium-high heat. Splutter mustard seeds. Add shallots. Saute for 2 minutes or until light brown.
  • Add garlic, curry leaves and green chili. Saute, stirring, for another 2 minutes. Add coconut and ground turmeric. Saute for a minute.
  • Stir in mushrooms. Season with salt. Cook, stirring occasionally, for 5-6 minutes or until mushrooms turn soft.
