Pineapple fried rice, obviously, doesn’t need much explanation. It’s simple, easy to make and so good!

And of course, don’t forget the two ingredients that make this fried rice magical – soy sauce and sweet chili sauce. If you want to transform it into a spicy meal, feel free to add a splash of sriracha hot sauce.

Before you start cooking, make sure all the ingredients are ready. Cook rice, chop all the veggies, and keep the sauces near the stove ready to use.

I’m pretty sure once you try this fried rice, you’ll definitely call it better-than-takeout pineapple fried rice.

Ingredients

  • ▢ 1 tablespoon oil
  • ▢ 3 garlic cloves thinly sliced
  • ▢ ½ cup chopped green beans
  • ▢ ½ cup chopped carrot
  • ▢ ½ cup chopped ripe pineapple
  • ▢ 4 cups cooked rice basmati or long grain rice (I used basmati)
  • ▢ 1 tablespoon soy sauce
  • ▢ 1 teaspoon sweet chili sauce
  • ▢ ½ teaspoon white pepper powder
  • ▢ Salt to taste
  • ▢ Spring onions chopped, to garnish

Instructions

  • Heat a wok over medium-high heat. Heat oil. Add sliced garlic. Saute, stirring, until golden.
  • Add beans and carrots, and stir-fry until tender. Stir-fry pineapple for 2 minutes. Add cooked rice. Stir-fry for 1-2 minutes or until heated through. Add soy sauce, sweet chili sauce and white pepper powder. Stir-fry for 1 minute. Check seasoning. Add more salt if needed.
  • To serve, transfer pineapple fried rice to serving bowls, and garnish with chopped spring onions.
