Spicy Baked Beans Recipe

Commonly, this beans recipe is made with navy beans, however, you can also use a mixture of cannelloni and black beans. To cut down the prepping and cooking time, I used canned baked beans and canned tomatoes in this recipe.

Start with sauteing onions in a little oil. Once the onions turn light brown, add in the dried spices – turmeric, garam masala and red chili powder. Saute these aromatic spices and then cook the canned tomatoes. The base of this spicy baked beans is ready now. At this stage, you can add in baked beans, fenugreek leaves and coriander leaves. Combine them together and cook for about 4-5 minutes.

Although I chose Indian spices in this recipe, feel free to play around with your favorite spice mix like curry powder. Kasuri methi or dried fenugreek leaves is optional in this recipe, however, I love the flavor it adds to this dish.

Toasted bread, sourdough or regular bread, and fried eggs with a light sprinkle of red chili powder make this a beautifully delicious brunch!
