
Yesterday was so hectic, I made this super simple yet nutritious side dish for dinner –stir fried spinach or thoran. I’ve tried many stir fry recipes over the years, and this is one of my all-time favorites.
Spinach (leaves and stems) are finely chopped, then sautéed with coconut and ground turmeric. It’s easy, healthy, light and damn delicious!
Spinach do wonders when they’re sautéed with coconut, making it tastedelicious. The addition of cumin seeds takes it to the next level.

Ingredients
- ▢ 3 and ½ cups roughly chopped spinach
- ▢ 2 garlic cloves finely chopped
- ▢ 1 tablespoon finely chopped red onion or shallots
- ▢ 1-2 green chilies finely chopped (optional) (I didn’t use them)
- ▢ ½ teaspoon cumin seeds
- ▢ ½ teaspoon ground turmeric
- ▢ ¼ cup grated coconut
- ▢ 1 sprig of curry leaves
- ▢ 1 tablespoon oil
- ▢ Salt to taste
Instructions
- Heat oil in a large pan over medium-high heat. Splutter cumin seeds.
- Add onion, garlic and curry leaves. Saute, stirring occasionally for 2-3 minutes or until onions turn golden.
- Stir in spinach, coconut, ground turmeric, green chilies (if using) and enough salt. Cook, covered, for 3-4 minutes or until spinach is tender. Remove from heat. Serve warm with rice.
