Ingredients

  • ▢ 1 large banana / ripe plantain steamed, cooled, and mashed
  • ▢ ½ cup desiccated coconut
  • ▢ ¼ cup rice flour
  • ▢ 1 teaspoon ghee
  • ▢ ¼ cup sugar
  • ▢ ½ teaspoon cardamom powder
  • ▢ 3 tablespoon plain flour
  • ▢ 1 cup bread crumbs
  • ▢ A pinch of ground turmeric
  • ▢ Oil for deep frying

Instructions

  • Place rice flour in a large bowl. Rub in ghee so that the flour will look like bread crumbs. Add in desiccated coconut, sugar, mashed banana, and make dough.
  • Make small balls out of the dough, and shape them into cutlets. Keep aside.
  • To prepare the batter, combine plain flour, ground turmeric, and enough water.
  • Meanwhile heat oil in a deep bottomed pan. When the oil is hot enough, dip the prepared cutlets in batter, roll in bread crumbs, and deep fry. Serve.
